Salted Caramel Bliss Balls
Plant Based, Gluten Free, Medjool Date based Energy and Protein Balls
By popular demand! If you’ve come on one of my day retreats, you maybe familiar with these beauties that give you a nice little energy boost without weighing you down. These are actually deliciously healthy for you too and very easy to make! Great for the kid’s lunchbox or when you’re on the go.
Salted Caramel Bliss Balls
Yeild: 12 balls (for double batch, simply double the quantities)
Time to make: 10 minutes
Equipment Needed:
Food Processor or Blender
Medium sized Mixing Bowl
Small bowl for rolling in coconut
Ingredients:
250 grams Soaked Medjool Dates (apx one cup)
Pinch of Himalayan Salt
1/2 Cup of Unroasted Almonds
1/2 Cup of Shredded Coconut
1 tsp Vanilla extract
2 TBSP Maple Syrup
1/4 Cup of Amazonia Raw Salted Caramel Protein Powder (Optional)
3 TBSP of Desiccated Coconut (enough for coating the outside)

How to Prepare:
Soak dates in hot water for about 5-10 minutes and drain. Place drained dates in food processor or blender with all remaining ingredients except desiccated coconut and maple syrup. (The maple syrup is used to add a little moisture to the mixture if it gets too dry and adds some sweetness). Pulse all ingredients throughly until almonds are chopped well and dates are like a thick paste.

Take about a 2 TBSP size of mixture into hands and roll between your palms into little balls. Roll each ball in the dessicated coconut mixture and set aside.
Once all balls are rolled out, store in the refrigerator.
